Is it true that my mom or dad can be my driving instructor when I do my behind-the-wheel training instead of a professional driving school instructor like the ones they have at JES Driving?
It depends on what your state's laws are.  You should contact the California DMV or a licensed driver training school like JES Driving to find out if California allows driver training with a parent.
What if I don't know how to operate a vehicle with a stick-shift? Does JES Driving have an automatic-shift vehicle they'll let me train with?
Since you're just learning how to drive, you probably don't know how to operate either a manual-shift or an automatic-shift vehicle!  However, if you have a preference as to a manual or an automatic, you probably should call JES Driving to see if they can accommodate your request prior to your signing up to take their driver training course.
The area in which I live is mostly undeveloped--very few paved roads and mountains are all around. Will JES Driving be able to teach me how to drive safely on bumpy terrain as well as in a city or town?
Considering that you live in a rural area, chances are excellent that a local driving school like JES Driving will want you to be able to drive safely on dirt roads and other types of rugged terrain.  You may wish to contact JES Driving to find out exactly what their behind-the-wheel training course includes before enrolling in their training course.
I'm turning 14 in a few weeks. Can I get a learner's permit to drive in California after my 14th birthday?
Most likely, no.  Most states (though not all) have laws which require that you be at least 15 or 15 1/2 before to be eligible to apply for a learner's permit.  Nevertheless, you may wish to contact the California DMV office or a California-certified driving school such as JES Driving to find out for certain what the minimum driving age is in your local area.
