Are all the driving schools listed on your website fully-accredited by the North Carolina DMV to offer behind-the-wheel training courses in North Carolina?

Considering you're a brand new driver, you probably don't know a whole lot about driving ANY type of vehicle, be it a stick OR an automatic!  Nevertheless, if you have a preference, you probably should contact B & L Driving School and see if they can accommodate you before signing up to take their driver training course.
The area in which I live is mostly undeveloped--very few paved roads and mountains are all around. Will B & L Driving School be able to teach me how to drive safely on bumpy terrain as well as in a city or town?
Considering that you live in a remote area, chances are excellent that a local driving school like B & L Driving School will want you to be able to drive safely on dirt roads and other types of rugged terrain.  You may wish to contact B & L Driving School to find out exactly what their driver training course includes before enrolling in their training course.
After I turn 14, will I be eligible to obtain my instruction permit so I can begin to learn how to drive?
